Our family harvests olives in Chavari and takes them to the local mill. These photographs follow that shared work, from laying the nets to watching the oil emerge.

from olives to oil

Step 1
Hand-Picking
Our family harvests the olives by hand. These photographs show the people and the work behind each harvest.

Step 2
Gathering the Harvest
Nets are spread beneath the trees to gather the olives. The family collects the harvest and takes it to the local mill.

Step 3
At the Local Mill
The olives are milled locally. We will add batch-specific processing details once the method, timing and temperature records have been checked.

Step 4
By Angelo's Own Hands
Ευάγγελος (Angelo) cares for the grove alongside his family. Harvest photographs capture that shared work, from gathering the olives to taking them to the mill.
The Harvest
Nets are laid beneath the trees to gather the olives. Our photographs capture the crew at work through the harvest.

A Family Tradition
The Blessing of the Harvest
Our photographs include the village priest blessing the harvest — a family moment at the mill.
It is a small ceremony that most visitors would never notice — a few words, a blessing over the crates, and a nod from Angelo before the mill starts. But it is the moment that turns a harvest into a tradition.

Liquid Gold, the Moment It's Made

Inside the Mill
The family brings its olives to the local mill. The photographs below show the people, crates and equipment involved.

Nothing Is Wasted
Even the Prunings Go Back to the Land
Every branch we cut is chipped into mulch on-site rather than burned — returning nutrients to the soil instead of sending smoke into the air. It's a small habit, but it's the same instinct that runs through everything we do: nothing from this land goes to waste.
It's also how Κωνσταντίνος (Konstantinos), Ευαγγελία (Evangelia), and Αλέξανδρος (Alexandros) are carrying the grove forward — the same discipline their father taught them, applied to sustainable practices he never had the tools for.

What Came Before
A Piece of Our Family’s History
Before the modern mill, this is what pressed our family's oil — an iron screw press, worked by hand. It still stands on the estate, not as decoration, but as a reminder of the standard we're still holding ourselves to.

Care and Clear Information
From the Grove to the Mill
Our Koroneiki olives come from the family grove and are harvested by hand. Processing details for the relevant batch will be published once the mill records have been checked.
Independent Laboratory Analysis
We send our olive oil to an independent third-party laboratory for analysis, conducted outside our control. We are awaiting the Certificate of Analysis. Once received and checked against the relevant batch, we will publish the report with a clear explanation of its results.
